Inspired by the menu from Elliot Moss at Buxton Hall BBQ, North Carolina we are hosting a pop-up eat and learn event at our HQ. When you arrive, you will be actively helping to cook Carlingford Lough BBQ Mussels & Sourdough. These mussels are a BBQ lover's dream - smoked tomato, charred lemons, and cast-iron cooked mussels all served with fresh sourdough bread. To make it more interesting we are also going to cook some Irish soda bread on the BBQ at the same time.
After starters we get into the danger zone with deep fried organic Irish buttermilk chicken cooked in lard over open flames. If a Dutch Oven full of boiling fat doesn't kill you then the deep-fried chicken probably will :-). We will serve classic mashed potato (cooked on the BBQ of course), home-made southern chicken gravy, and salads on the side.
For dessert our resident baker, Laura, will have prepared a classic Memphis Fig Cake. This is one of the most complicated cakes we have ever made with 21 ingredients including our very own Nollaig spice blend.
We will serve a complimentary Barbacoa Rum or Low 'n' Sloe Gin for the non-drivers, and you are welcome to BYOB. There will be loads of soft drinks available. Everyone will take home recipes and instructions for all the dishes.

Learning
During this event you will learn how to char food and fry on a Weber kettle. You will learn how to deep fry in a Dutch Oven. You will learn how to make home-made "KFC" gravy using a roux and fresh chicken stock. There will be plenty of food and nobody will leave hungry.
Venue
We have ample parking at the venue. All food and equipment is provided. There will be basic toilet facilities. The venue is partially outdoors (with shelter available) so please bring a rain coat. The venue is accessible, but you may need some assistance with a low step. Children are welcome, but please be aware that we are on a very busy main road and constant supervision is required. Children do not need as ticket if you are happy to share with them.
Dietary
Please note we cannot cater for allergens, dietary requirements, or special requests. Most of the main courses in this series are gluten free and if you let us know we will try and cater for gluten free. The home made cakes are not possible to make with GF flour. This event is not suitable for vegans or vegetarians!
Food Safety
You will not be handling raw meat. You will be provided with hand-washing facilities. You will be partly preparing your own food and this is a learning event rather than a catering event. We are approved by the HSE to make cakes and prepare sauces in our kitchen and we have HACCP training. All other meal prep will be hands on and part of the learning event.
